Today we have a recipe from the lovely Lucy Neuburger, and it’s just the thing for a hot day. Over to Lucy:<\/p>\n

Serves a very greedy 1 person, though can easily be multiplied
\n<\/span><\/p>\n

For the salad
\n<\/em><\/p>\n

A handful of leftover roast chicken, sliced or shredded<\/div>\n
1 shallot, finely chopped<\/div>\n
1\/4 of a cucumber, peeled into ribbons<\/div>\n
1 small carrot peeled into ribbons<\/div>\n
1 red chilli sliced thinly (I tend to add more, but I like my spice)<\/div>\n
1 nest of dry noodles<\/div>\n

\u00a0For the dressing
\n<\/em><\/p>\n

Juice of 1 lime<\/div>\n
Splash of fish sauce (or soy sauce if you prefer)<\/div>\n
1 teaspoon of brown sugar<\/div>\n
<\/div>\n
Mint, coriander and a few roasted peanuts to garnish<\/div>\n
<\/div>\n

Method:<\/div>\n
<\/div>\n
Could not be easier!<\/div>\n
<\/div>\n
1) Cook noodles according to packet instructions, drain, run under cold water and set aside.<\/div>\n
2) Combine all the salad ingredients along with the noodles in a large bowl.<\/div>\n
3) Mix the dressing in a mug or small jug and add into bowl, mixing everything together until well combined.<\/div>\n
4) \u00a0Serve garnished with chopped mint, coriander and a few peanuts.<\/div>\n
