Exam on Thursday but I just had to celebrate the fact that, after three and a half months of to-ing and fro-ing with Sky and BT, we finally have the internet. My revision has been transformed – no longer do I have to schlep it to the library to get distracted by the myriad weird and wonderful websites, I can do it at home with a cup of tea clasped in my fist. Huzzah!<\/p>\n

So to kick off what I hope will be a return to slightly more regular blogging here is, as promised, the first of the weekly(ish) luscious lavish lunchbox luxuries on a budget.<\/p>\n

Cous cous salad with roasted peppers, cherry tomatoes, feta, and whatever else you wanna sling in it<\/span><\/p>\n

Serves 3-4<\/p>\n

2 red or orange peppers, halved and seeded
150g cherry tomatoes
200g cous cous
1 red chilli, seeded and chopped
feta, mint, prosciutto…go nuts.<\/p>\n

Preheat the oven to 200C.<\/p>\n

Season the peppers and drizzle with oil. Roast for half an hour, adding the cherry tomatoes for the last 10 minutes. Meanwhile, pour 300ml water over the cous cous (or whatever the packet says), cover and leave for 5 minutes. Stir thoroughly with a fork. Roughly chop the peppers and sling them in with the tomatoes, (which should be in tact so that they pop wonderfully intense tomato-ey juice in your mouth (though take care not to spray your desk neighbour with the stuff)) chilli and whatever else you are putting in it. Serve warm, ideally. <\/p>\n
