Something I’ve noticed when using the more flavourful rather than tender-ist cuts (flank, skirt etc); when you leave them to relax, stick a smudge of butter on top. It slowly melts and blends in with the meat juices enriching them with buttery magic. Ok, not so good when you’re on a diet in which case, my advice is to omit the steak, wine, onions, oil, egg and replace with a stick of rare celery.
