very interesting topic James, great article… clearly you have stirred up something here and it’s very personal for many people… I do feel that we have come to a point in our civilisation that just because something is ‘traditional’ is not enough reason to continue to do it if it harms or effects the welfare of any living creature (i’m talking about food production here and not slaughter techniques) and there are many ‘old school’ people in the food world who would rather keep things the way they are just to satisfy some kind of ‘way of life’ for a dying fraction of the population… and we’ve come too far in this civilised world to simply say, ‘if you don’t like it, don’t eat it’ it’s not enough anymore, we all need to take responsibility…
