Lufthansa used to serve intercont economy main dishes (invariably meat with brown sauce) on their UK business class service until they saw the light and started serving really good antipasti-type meals.
Good food’s do-able. Not on shorthaul in economy due to time/cost constraints and not on longhaul in economy due to cost constraints.
Try a good airline’s longhaul business class and you could be surprised. First class more so.
I always take some fruit, some good cheese and a home-made sandwich on decent bread when I fly. Just in case

Everything all in it’s own little package, I didn’t care if it tasted naff it was transformed into something wonderful by the novelty of being on a plane. Ah the naivety of youth.
