Great to see your recipe. Ruth and I love butchering and cooking meat, we’ve setup a supper club, The Queens of ‘Cue. We spit, we smoke, we rake the coals! We built a spit, by welding a windscreen wiper motor and a bicycle crank set together, and we’ve been cooking with that.

We’ve just put together the menu for our next barbecue, which is taking place on the 23rd July. It’s a Bird Feast that will take place at my art studio in South East London.

Here’s the menu:

Rosemary Lemonade

Quail eggs, spiced salt
*
Duck rillettes, sour cherry jam, brioche
*
Spit roast chicken, grilled chicken heart skewers
*
Romesco
Alioli
Salsa verde
*
Marinated courgettes and carrots
Grilled tomatoes

I Barbecued a Barn Owl (spatchcock’d of course), and our dogs are ‘self-worming’.
