We’ve been gifted many courgettes from work colleagues and I’m not one to turn down free food. They’re fantastic griddled and chucked into pasta (http://designerdishes.blogspot.com/2010/07/summer-pasta.html), grated into salad (http://designerdishes.blogspot.com/2010/08/courgette-salad-with-toasted-seeds.html) or roasted and stuffed (http://designerdishes.blogspot.com/2010/08/stuffed-marrow.html). I haven’t yet tried anything sweet so I’ll have to give your recipe a go!
