If you are suffering from a glut of courgettes and have tried them every which way, then this might be the solution for you. The loaf is sweet and gently spiced, best paired with a cup of tea and a sit down. It freezes well, too.
Makes 2 loaves
3 beaten eggs
400g caster sugar
250ml sunflower oil
1 tsp vanilla essence
500g plain flour
1 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp ground cinnamon
A pinch each of nutmeg, allspice, and salt
400g courgettes, peeled and grated
– Preheat the oven to 170C.
– Whisk the eggs, sugar, oil and vanilla thoroughly. Mix the dry ingredients and tip in the wet, stirring to form a smooth batter. It will seem quite stiff but the courgettes loosen it up. Now fold in the grated courgettes and tip into 2 greased loaf tins. Bake on the middle shelf of the oven for an hour and a quarter. Leave to cool for 10 minutes before turning onto a cooling rack. Ta da.

Glad to add another sweet use for the courgette glut! I like the courgette & coconut cake from Red Velvet & Chocolate Heartache, and the courgette hummus from Gastrokid cookbook. Then there’s always the entertainment of doorstep courgettes. Who will get found out this year?
Ha, are doorstep courgettes exactly as they sound? Just leave your unwanted courgettes on other folks’ doorsteps? Love it.

This looks lovely! We’ve been gifted many courgettes from work colleagues and I’m not one to turn down free food. They’re fantastic griddled and chucked into pasta (http://designerdishes.blogspot.com/2010/07/summer-pasta.html), grated into salad (http://designerdishes.blogspot.com/2010/08/courgette-salad-with-toasted-seeds.html) or roasted and stuffed (http://designerdishes.blogspot.com/2010/08/stuffed-marrow.html). I haven’t yet tried anything sweet so I’ll have to give your recipe a go!

Been using a similar recipe ever since I visited a friend in the States. Half white sugar and half demerara works nicely. Best served warm from the oven, with butter. Mmmmmmm.
