I’ve got a new game. Next time you don’t know what to have for supper, ask a friend to name a random ingredient, and you have to incorporate it into what you cook. I was feeling totally uninspired last night, and asked the good people of Twitter to help out. Aside from the one suggestion of Angel Delight, it was amazing how helpful it was. I ended up with this, and very good it was too.
Serves 1
A handful of washed salad leaves
A handful of cherry tomatoes
A chilli, deseeded and finely chopped
Slices of halloumi
A few mint leaves
A squeeze of lemon
Olive oil
Salt and pepper
– Make the dressing by whisking about a tablespoon of olive oil into a good squeeze of lemon juice. Season with salt and pepper and set aside.
– Halve the tomatoes and arrange on a plate with the salad leaves. Heat a little oil in a frying pan and fry the slices of halloumi for a minute or two on each side. Lay over the salad, sprinkle with chopped chilli and a few torn mint leaves and dress. Serve with warm pittas.
Sounds like a winner to me. Might make this for lunch tomorrow.

Ta lovely. I personally wouldn’t recommend parma ham, slight salt overload. If you really need meat that much some shredded chicken would be betta. But each to their own of course 🙂
We’ve just come back from Crete and I’m on a promise to recreate a stifado at the weekend! Now if I make this lovely salad, agree to crack open the raki, we could even have friends over!
