Have we all had enough of asparagus yet? I certainly haven’t. For me it’s the king of spring vegetables, transformer of the banal into the beatific. Throw a duck egg into the mix and you have either a deeply indulgent lunch or a simple dinner party starter.
Serves 1
1 duck egg
A handful of asparagus, trimmed and washed
Salt and pepper
A little melted butter (optional)
– Bring two pans of water to the boil. To the first carefully add the duck egg and simmer for 5 minutes. (If using a hen’s egg boil for 3-4).
– After the egg has been simmering for 2 minutes add the asparagus to the other pan along with a pinch of salt. Simmer for 3-4 minutes, removing the duck egg when appropriate. Drain the asparagus and serve immediately, with a few twists of pepper and a pinch of sea salt and, if feeling particularly self-indulgent, a pot of melted butter.
Sounds yummy…I’ve never tried duck eggs – are they richer than hen’s eggs?
They are but not outrageously so. But the yolk is wonderfully amber and sticky. Try one, J

Duck and asparagus – good match-making! I think a good bit of runny yolk is an even better accompaniment than hollandaise. I wonder if you could be really lazy and cook the green spears and the egg in the same pan?

THE most satisfying looking dish. Made even more triumphant by the matching egg-cup and asparagus. YUM. And for the record, there is nothing indulgent about melted butter with the spears. It’s just the way it has to be done…
I love dipping toast in my sunday morning egg and everyone here in Germany looks at me as if I’m crazy. Now, I will serve them this and they’ll love “egg dipping” for sure! 🙂
this is one of my favourite way to eat asparagus. Have only just found your blog so not sure if you have ever tried this by making ravioli with egg yolks – also sublime.
