My favorite use of roasted chicken leftovers… many… Making chicken soup with the bones w/ some meat left first, then turning it into things like Waterzooi, Chicken Couscous, Chicken curry, etc. later on. I also like to use the plucked meat and make various chicken salads, for sandwiches, or stand-alone, or sometime mix them w/ rice, pasta, couscous and chopped veggies. As you can see, I love using leftovers to keep me going for a week or more — just like you!
